Meanwhile, here is a delicious gluten-free bread recipe that tastes so close to the real thing, we think you won’t be able to tell the difference!

You may notice while handling the dough, it is more sticky than your usual wheat bread. This is because most gluten free breads are used with rice flour, thus making it very sticky. The end result is still very much soft and fluffy like your regular wheat bread.

Delicious Gluten Free Bread

*you will need:

1 1/2 cups warm skim milk

1 egg

1 tbsp apple cider vinegar

1/3 cup egg whites

1/4 cup honey

1/4 cup canola oil

1 tbsp xanthum gum

1 tsp salt

1/2 cup tapioca flour

1/4 cup garbanzo flour

1 cup white rice flour

1/4 cup millet flour

1 cup brown rice flour

1 tbsp active dry yeast

Add these ingredients into your bread machine, then check the dough consistency after 5 minutes. If it is too wet, add more rice flour, if it is too dry, add more skim milk. ENJOY!!!

While catering for a recent event, one of my special clients requested we make something specific that fit their themed corporate event. They happened to choose a Hawaiian theme and wanted to have this made  for a mid-week luncheon for their business partners. We came up with this recipe to suit them, but it could be suited to meet many different styles of meetings or events. ENJOY!

Macadamia Encrusted Chicken with Honey-Mustard Dip

prep: 25 min bake: 45 min

  • Nonstick cooking spray
  • 2-3 pounds of chicken drumsticks, skinless
  • 1 1/2 cups herb-seasoned stuffing mix
  • 3 1/2 oz finely chopped macadamia nuts
  • 1 egg
  • 3 tbs milk
  • 1 tsp soya sauce
  • 2 tbs honey
  • 3 tbs butter, melted
  1. Preheat oven to 350 degrees. Lightly coat 15×10×1 inch pan with coconut oil.
  2. In a shallow pan, stir together macadamia nuts and the stuffing mix. In a small bowl, combine the milk, 2 tbs honey, 1 tsp soya sauce.
  3. Dip chicken into the mixture and then into crumb mixture to coat. Put chicken into pan and pour butter on top.
  4. Bake for 1 hour. Do not turn chicken when baking.

You can also serve this dish with a side of sliced pineapple, it goes very well with the flavor of the chicken!

Add a little holiday cheer with cinnimon and spice and eggnog is nice, ciders and coffees too!

You can curl up to a fire with one of these tasty holiday treats or you can serve it up to a gang of chilled visitors on a frosty solstice night.   Either way there is no end to the joys you may find in a big cup of holiday spice!

First we have eggnog.  The signature  wintry Christmas drink.  This classic beverage began it’s rise to fame in England and has earned its right in the holiday spotlight.  Despite it’s somewhat crude implications it was actually a drink enjoyed by the upper class in England, I’ve always thought of it as a drink created by some really desperate farmer!

The second holiday drink I know everyone loves for sure… hot chocolate!  How could you posibly not like this drink.  This is a really welcome treat at my house because you know that the moment is timeless when you break out the hot cocoa!  Really that’s true with all of these drinks for me. They all invoke some wild sentementalism that is truly delightful and really makes this time of year for me.

Next we have, for more exotic tastes, the candy cane cocoa,  gingerbread latte, white chocolate mocha, eggnog latte, and the list goes on.  This list is directly related to whatever the ad consultants for starbucks pull out of their brains.  All the while there’s some great combo ideas out there.

You can’t have a holiday season without brewing up an amazing batch of apple cider.  You can go wrong with cider though, and that’s when you just buy the cider in the plastic bottle and heat it up in the microwave then serve it to your guests!  No you can really mess up if you try and pull that off.  Here’s a great spiced cider recipe your guests should really enjoy wholeheartedly.

Directions: take all ingredients and bring to a simmer.  let simmer on med heat for 15- 20 minutes.  Let cool.  strain and serve.

Spiced Cider Ingredients

  • 1/4 cup packed brown sugar
  • 1/2 teaspoon whole allspice
  • 1 teaspoon whole cloves
  • 1 cinnamon stick
  • 1/4 teaspoon salt
  • 1 pinch ground nutmeg
  • 1 large orange, quartered with peel
  • 4 quarts apple cider

Gingerbread Cookies

Cookies

  • 3/4 cup packed brown sugar
  • 1 stick salted butter
  • 1/4 cup molasses
  • 2 large eggs
  • 3 3/4 cups all-purpose flour, and  more for laying out work surface
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg

For the icing:

  • 1 cup confectioners’ sugar, sifted
  • 1 to 2 tablespoons milk
  • food coloring
  • Sprinkles

Directions

With a mixer, cream the sugar and butter in a good sized bowl till’ combined.  (keep mixer at a low speed) Then mix in the molasses and egg.

Sift the flour, baking soda, cinnamon, ginger, nutmeg and salt in a separate bowl. Then add the dry ingredients to the butter mix and whip in with a spoon.  Wrap up the dough in a bag and refrigerate until firm or 1 hour.

Allow the dough to sit for about 15 minutes at room temp.  Preheat the oven to 350, and line cookie sheets with parch paper. Take a cup of dough and roll out on a floured board to 1/4 inch thick.  Cut out your gingerbread shapes and using a spatula, transfer the cookies to the sheets and refrigerate for 20 minutes, then bake for 15 minutes or until the edges begin to brown.

Making The Icing:

Mix milk and confectioner’s sugar together in a bowl.  Add food coloring and divide into individual bowls.  Decorate cookies with a pastry bag and top with sprinkles.
